Today was a day for trying new food. Until I get paid this Thursday we are eating whatever we have and I'm trying to get creative. This morning I made peanut butter pancakes with our weekly breakfast. I thought they were pretty good but lacking something... So next time I'm going to stir some roasted, salted peanuts into the mixture and serve them with warm honey. :)
For dinner I headed over to Supercook. I LOVE that website! We had a baked chicken, frozen broccoli and macaroni dish made with chicken broth and cream of chicken soup. I was a little worried but Branden LOVED it! When I asked him if there was anything he wanted me to do differently he held up his empty bowl so I'm taking that to mean he liked it as it was but he wants me to make more in the future. That's fine, he needs to eat more and gain weight. He told me the other day that his goal weight is 225 so he's got about... 75 lbs to gain! Ugh! I shouldn't think about how skinny he is right now.
Yesterday I took a recipe that I've made before and completely reinvented it. The original had 2/3 c of BBQ sauce that totally took over the entire dish. I mean the ONLY thing you could taste was BBQ sauce even though there was cheese and hamburger and bacon in the meal as well. It was a total turn-off to both of us. Even ketchup would have been overpowering. SO, I left out a few ingredients and replaced the sauce with cream of mushroom soup. I know it's NOTHING like BBQ sauce but that was the point. I made the dish with no tomato products and I thought it turned out great! Even better, Branden liked it.
Tomorrow will bring more adventures in cooking without shopping. I have plenty of food storage to play with so we'll see what comes out of my kitchen. I look forward to attempting new things and maybe improving them when we have more money for fun ingredients.
